This fermentation jar has a water trough that creates a seal so no bacteria forms when fermenting. It is great of small batches of pickles, (green tomatoes are my favorite) kimchi, and sour kraut. It can sit on the counter for a day or two and then go in the fridge, which is how I like to ferment.
